In praise of eggs, and my patented technique:
The secret sauce:
- Cook with butter, so much more delicious.
- Use wooden chopsticks on a non-stick pan. The ‘Tramontina’ non-stick on Amazon is what I use.
- Slightly under-cook the eggs. The eggs will keep cooking *AFTER* they’re on the pan (the heat). This is what I learned from chef Gordon Ramsey.
- Just season with salt and pepper; nothing else necessary!
