No Added Sugar Flour Cookies
Makes: 12–14 cookies
Ingredients
- 1 cup mashed very ripe banana (about 2 bananas)
- ¼ cup unsweetened applesauce
- ¼ cup butter, melted (or coconut oil)
- 1 egg
- 1 tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- Pinch of salt
Optional:
- Chopped walnuts
- Unsweetened coconut flakes
- Chopped dates if you want more natural sweetness
Instructions
- Heat oven to 350°F (175°C).
- Mix banana, applesauce, butter, egg, and vanilla.
- In a second bowl combine flour, baking powder, cinnamon, and salt.
- Fold dry into wet ingredients.
- Scoop tablespoon-sized portions onto a lined baking sheet.
- Bake 12–15 minutes until lightly golden.
- Cool completely—the texture improves as they set.
For more of a bakery-cookie feel: use 2 cups flour instead of 1½ and chill the dough for 20 minutes before baking.
